I don’t know about you, but I love an easy dinner recipe. By the end of the day (when I’m running out of steam) I need a simple, easy and nutritious meal that doesn’t require a trip to the Himalayas or the milk of Ugandan sea goat.This often leads me to making the same old recipes day after day. But no more! These delicious stuffed peppers are packed with flavor and pasture raised protein.They save well and can be made ahead (or even frozen) for even more flexibility. With added vegetables it’s a home run in our house!
Ingredients:
- ½ lb. Longbottom Farm Ground Chorizo
- ½ lb. Longbottom Farm Ground Beef
- 4 bell peppers
- 12 oz marinara sauce (We recommend Nona’s Italian Cucina made right here in Charlottesville, VA)
- 1 cup shredded cheese
Optional:
- 1 cup cooked rice or cauliflower rice
- 1 ½ cup spinach
Directions
1. Preheat oven to 375F. Lightly coat a 9×13 baking dish with cooking spray oil and add just enough water to cover the bottom of the dish. Cut bell peppers from top to bottom and remove seeds. Place peppers cut side up in prepared baking dish.
2. In a skillet or dutch oven, brown chorizo and ground beef over medium heat until fully cooked. Add marinara (and optional cooked rice and spinach if desired) cook until well incorporated, then remove from heat and add cheese. Stir well.
3. Spoon filling into pepper halves and bake for 30-35 minutes until peppers are tender.
We like to serve with a bit more cheese and sour cream. That’s it and Enjoy!
A Few Reminders
We are sold out of Pastured Poultry for the year but plan to begin April of 2023. Apologies and thanks for your patience.
We’ll be taking pigs next week and will be fully restocked on Kielbasa, Ground Pork, and Bratwurst. Bratwurst and Kielbasa have been a huge hit this year and thank you to everyone that provided feedback on this. We should be stocked pretty well on these and double the dates next year to make sure we stay in stock.
Just a heads up, chickens drop their egg production by around 30% in the winter. This means less eggs in stock so order ahead of time if you are taking advantage of the 3 and 5 dozen egg discount. They’ll still be in stock, but we may need a few days if you’re ordering larger quantities.
Apologies to everyone waiting on Beef Shares. The demand has way outpaced what we can produce, but we’re working on getting more processing dates and beefing up (see what I did there ) our herd. Thanks for your patience.
That barn is proceeding way behind schedule but the shell is up. Once electricity and water are installed, we’ll be good to go. This will become the new pick-up area with freezers and expanded pick-up times and days! Farm store and more to follow. Hoping for late November but likely early 2023.

Curbside Pick-up – Order online and pick up on farm with our Curbside Pick-up. Place your order, choose your day, and pick-up anytime on that day between 11am and 4pm. That’s it!

We deliver every Friday for orders over $50 ($6 delivery charge) and FREE DELIVERY for orders over $99. Simply Order online and we’ll take care of the rest!
