Our dry-aged grass-fed beef tongue comes from cattle raised on pasture here in Central Virginia. Beef tongue might seem unusual if you’ve never tried it, but it’s a delicacy in cuisines around the world—and for good reason.

What Makes It Special:

Beef tongue is incredibly flavorful and becomes melt-in-your-mouth tender when cooked properly. It’s a muscle that gets a lot of work, which means deep beefy flavor. The texture is unique—smooth and almost velvety once you peel away the outer skin after cooking.

It’s also one of the most nutrient-dense cuts you can get, packed with B vitamins, iron, zinc, and high-quality protein.

  • Braised: Slow-cook in broth with vegetables until fall-apart tender
  • Pressure Cooker: Cut cooking time way down while still getting tender results

Preparation Tips:

Beef tongue needs slow cooking—simmer in water or broth for 2-3 hours until tender (or about 60-90 minutes in a pressure cooker). Once it’s cooked, let it cool slightly, then peel away the outer skin—it should come off easily.

Season the cooking liquid well with onions, garlic, bay leaves, and spices. The tongue will absorb those flavors as it cooks.
