School’s back in, schedules are crazy, and somehow dinner still has to land on the table.

Between pickups, practices, and homework, it’s a lot. We get it (we’re right there too with homeschooling and a gazillion activities).

Cooking takes time and sometimes it’s just not there, so here are few protein preps that actually work when life’s moving a hundred miles an hour:

Chicken Salad in Minutes

Cook a few chicken breasts on Sunday, shred them, and keep them in the fridge. All week you’ve got quick options: chicken salad sandwiches, pita pockets, or tossed over some greens. One cook session = 4–5 fast meals.

Egg Muffins to Go

Whisk up a dozen eggs, add cheese, ham, or whatever veggies you’ve got, pour into muffin tins, and bake. They keep in the fridge all week. Heat them up in 30 seconds or eat cold running out the door. Instant breakfast or snack.

Chuck Roast, Slow Cooker Style

Grab yourself a chuck roast, add your favorite herbs and spices, toss it in the slow cooker with onion soup mix, diced tomatoes, and veggies. Let it go all day. You’ll have shredded beef ready for tacos, rice bowls, or mashed potatoes. One roast, multiple meals.

The Game Plan

  • Do a little prep on Sunday, save yourself all week.
  • Keep frozen veggies on hand for no-chop sides.
  • Stick with one-pot meals—less cleanup, more family time.
