🥚 3 Easy Egg Recipes (Because We’ve Got Eggs Again!)
Hey friends,
Let’s be real—when life gets busy, meals are often the first thing to fall apart.
You’re juggling work, family, farm chores, appointments… and suddenly it’s 6 p.m. and the question hits: “What’s for dinner?”
That’s where eggs come in.
They’re one of the simplest, most affordable ways to get a meal on the table fast. Full of protein, easy to prep ahead, and incredibly versatile. And the best part? We’ve got eggs back in stock!
Here are three of our favorite ways to use them—whether you’ve got five minutes or an hour, these recipes will help you get ahead of the week.
🥚 1. Classic Egg Salad (Make a Bunch at Once)
We like to steam 10–20 eggs at a time (steaming makes them way easier to peel).
Once cooled, keep them in the fridge for quick meals all week.
Egg salad is as simple as chopped eggs, a little mayo, mustard, salt, relish, and pepper.
Serve it on toast, in a wrap, or just grab a fork. You’ll thank yourself later.
🧀 2. Easy Omelets (One Egg at a Time)
No need to overthink it. Here’s our go-to method for a fast, filling meal:
- Crack 1 egg into a bowl and whisk
- Pour into a hot, greased skillet
- Let it set for 10-15 seconds
- Add fillings: cheese, peppers, onions, leftover meat, etc.
- Fold it over like a burrito and flip once.
- Slide onto a plate and Viola!
Top with sour cream and Cholula (our favorite). It’s fast, delicious, and uses whatever you’ve got in the fridge.
🧁 3. Egg Muffins (Meal Prep Win)
Want something you can grab and go all week?
- Preheat oven to 400°F
- Beat a dozen eggs
- Pour into a silicone muffin pan
- Drop in your favorite mix-ins: spinach, ham, mushrooms, cheese
- Bake 15–20 minutes (toothpick in center should come out clean)
Store them in the fridge and heat them up as needed. It’s a full meal in a couple of bites.

Place your order online, then once you receive the “Your Order is Ready for Pick-up” email (24 – 72 hours), pick-up anytime between 8am – 8pm SEVEN DAYS A WEEK! Your Order will be placed in our outdoor freezers / fridge for pick-up at your convenience and labeled with your name. Easy-peasy!
Local Delivery – We offer local home delivery to the Scottsville / Charlottesville / Palmyra areas (availability is determined by zip code at checkout). We deliver every Thursday for orders over $50 ($6 delivery charge) and FREE DELIVERY for orders over $99. Simply Order online and we’ll take care of the rest!
