A 10-Minute Meal That Practically Cooks Itself!

Welcome to Crock-tober! 🍂 October is that perfect time of year when things start to slow down, and we’re all gearing up for fall. If you’re anything like me, you’re ready for comfort food that practically cooks itself—especially as the days get shorter and cooler.

That’s where today’s recipe comes in: a slow-cooked roast that takes just 10 minutes to prep and then does all the work for you. Whether you’re using a chuck roast or shoulder roast, the result is fall-off-the-bone tenderness with incredible flavor. And by adding potatoes or carrots, you’ve got your side dish cooked right alongside it—talk about easy!  Our recipe today is our variation of a recipe from A Southern Soul and hope you enjoy it!

Ingredients:

  • 3-4 lb Longbottom Farm Chuck Roast or Shoulder Roast.  
  • 2 tablespoons olive oil
  • 1 packet dry onion soup mix
  • 1 cup beef broth (or just use water—don’t worry, the slow cooker will make its own broth!)
  • 4 large carrots, cut into chunks
  • 6-8 baby potatoes, halved
  • 3 cloves garlic, minced
  • Salt & pepper to taste
  • Fresh rosemary or thyme (optional but delicious!)

Instructions:

  1. Season the roast with salt and pepper. Heat olive oil in a large skillet over medium-high heat and sear the roast on all sides until browned.
  2. Place the roast in your slow cooker, then sprinkle the dry onion soup mix over the top.
  3. Add the beef broth (or water), carrots, potatoes, and garlic to the slow cooker.
  4. Cook on low for 8-9 hours (or on high for 5-6 hours) until the roast is tender and falling apart.
  5. Optional but recommended: Add fresh rosemary or thyme for extra flavor (I put rosemary in almost everything, ha!).

That’s it! Super easy, right? Just 10 minutes of prep, and your slow cooker does the rest. You’ll come back to a home filled with delicious aromas and a meal that’s ready to serve.

Cooking Tips:

  • Add Veggies for a Full Meal: Toss in some potatoes, carrots, or even parsnips for that one-pot meal magic.
  • Don’t Have Beef Broth? No Worries: Just add a little water—the slow cooker will make its own broth while cooking, giving you that same rich flavor.
  • Customize the Flavor: While this recipe is amazing as-is, don’t be afraid to tweak it! I never measure anything—just eyeball it and go with your gut. My secret? I throw rosemary in practically everything—ha! But feel free to use your favorite spices to make it your own.
  • Perfect Tenderness: The magic of the slow cooker means this roast will come out perfectly tender every time. Just set it, forget it, and come back to a meal that warms your soul.
