Every other day, Lexi and I take a long walk from our house to the other side of the farm. It’s a chance to take in the morning serenity, get some exercise, and get a good look at what’s happening on the farm. This morning, the temperature was 57F and it was the first hint that it’s mid September and Fall is approaching. It’s probably my favorite time of year as I start to imagine all of the projects of which I’ll get done about half, haha. It really is a great time though. The weather gets cooler, leaves change color, the humidity disappears, and just a nice break from the hot / humid summers we get here.
Imagining Fall also gets us thinking about comfort foods, one of which is Beef Short Ribs. These are one of our favorite cuts as there is so much you can do with them. Traditionally braising is one of the favorite methods. Braise on the stove in your favorite sauce (red wine, vinegar, and rosemary), add some veggies if desired (onions, carrots, and potatoes), or just go with a rub. There’s really no wrong way. Here is one of our favorite recipes from The Stay At Home Chef. Give it a try!
Grilling is also another way to cook short ribs. Grilling adds that smokey grill flavor and takes a fraction of the time (compared to braising) to cook. Marinate in your favorite sauce an hour or so before cooking (Red wine vinegar, red wine, and rosemary), then sear for 5 or minutes per side. I usually give the edges a sear as well. Cut into single ribs and serve on top of a bed of mashed potatoes. I’m getting super hungry typing this.

What Else is Going on?
We are sold out of Pastured Poultry for the year . It was our hope we’d have the barn set up with electricity, water, etc for processing, but we’re not there and won’t be there before the weather turns. After October, it’s too cold to raise broilers, thus we plan to begin April of 2023. Apologies and thanks for your patience.
Bratwurst and Kielbasa have been a huge hit this year and thank you to everyone that provided feedback on this. We should be stocked pretty well on these and double the dates next year to make sure we stay in stock.
Just a heads up, chickens drop their egg production by around 30% in the winter. This means less eggs in stock so order ahead of time if you are taking advantage of the 3 and 5 dozen egg discount. They’ll still be in stock, but we may need a few days if you’re ordering larger quantities.
