I hope you had a fantastic Thanksgiving filled with good food, great company, and maybe a few naps (i do love naps!). If you picked up one of our pasture-raised turkeys, thank you again for supporting our farm. We love knowing that our hard work helped make your holiday special! Thanks to all those that sent in holiday turkey pictures and stories!
Now that the big meal is over, you might be staring at a fridge full of turkey and wondering what to do with it all. Been there (am there)! Instead of the same old sandwiches, here are three easy, mouthwatering recipes to turn your leftovers into something exciting.
Cheesy Turkey Sliders
1. Cheesy Turkey Sliders
These little bites were a hit at our house. Perfect for lunch, dinner, or even a snack.
Ingredients:
- Leftover turkey, shredded
- 12 slider buns (Hawaiian rolls work great)
- 12 slices of cheese (Swiss or provolone are perfect)
- Mayonnaise (as much or little as you like)
- Dijon mustard (as much or little as you like)
- Slices of cooked bacon (optional but recommended)
- Melted butter
Instructions:
- Preheat your oven to 350°F.
- Slice the buns in half (keep them connected for easier assembly) and lay the bottom halves on a baking sheet.
- Spread mayonnaise and Dijon mustard on the buns.
- Add a layer of shredded turkey, followed by cheese and bacon.
- Place the top buns back on and brush them with melted butter.
- Bake for 15 minutes or until the cheese is melty and the tops are golden brown.
- Slice and serve!
2. Turkey Tortilla Soup
Warm, comforting, and full of flavor, this soup is perfect for a chilly post-holiday evening.
Ingredients:
- 2 cups leftover turkey, shredded
- 4 cups chicken or turkey stock
- 1 can diced tomatoes
- 1 can black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- Tortilla chips, shredded cheese, and chopped cilantro for topping
Instructions:
- In a large pot, combine the stock, diced tomatoes, black beans, corn, chili powder, and cumin. Bring to a simmer.
- Add the turkey and let everything simmer for 15 minutes to meld the flavors.
- Taste and adjust seasoning with salt and pepper.
- Serve with crushed tortilla chips, shredded cheese, and a sprinkle of cilantro on top.
3. Turkey and Sweet Potato Hash
A hearty, one-pan meal that works for breakfast or dinner.
Ingredients:
- 2 cups leftover turkey, chopped
- 2 medium sweet potatoes, diced
- 1 small onion, diced
- 2 tbsp olive oil
- 1 tsp smoked paprika
- Salt and pepper to taste
- Optional: Fried eggs to serve on top
Instructions:
- Heat the olive oil in a large skillet over medium heat.
- Add the sweet potatoes and cook for 10 minutes, stirring occasionally, until they start to soften.
- Toss in the onion and cook for another 5 minutes.
- Add the turkey, smoked paprika, salt, and pepper. Stir and cook for another 5 minutes until everything is heated through.
- Top with fried eggs if you like and serve warm.

Charlottesville City Market – (April 6th – Dec 21st) Saturdays from 9am – 1pm. A great way to stock up on some local food and treats while enjoying some fresh air. Thanks to all those that have come out to support local farms and artisans in our area. Hope to see you there!
Farm Pick-Up – Order online and pick up your order at our newly constructed barn. Place your order online, then once you receive the “Your Order is Ready for Pick-up” email (24 – 72 hours), pick-up anytime between 8am – 8pm SEVEN DAYS A WEEK! Your Order will be placed in our outdoor freezers / fridge for pick-up at your convenience and labeled with your name. Easy-peasy!
Locally Delivery – If you are within 30 minutes of our farm (availability is determined by zip code at checkout), we offer home delivery to the Scottsville / Charlottesville areas.
