Description

Mock Tender, also know as the fish steak, is a small medallion cut from the front shoulder (chuck) of the cow.  It’s a tougher cut of meat (kinda ironic for it’s name) but made tender with braising.  Being from the shoulder, it packs a ton of beef flavor.  An inexpensive cut, best braised, and full of flavor.
