Our grass-fed beef pancreas comes from cattle raised on pasture here in Central Virginia. Pancreas is sometimes called sweetbreads (though that term can also refer to thymus), and it’s one of those organ meats that’s been prized in traditional cuisines around the world for its delicate texture and mild flavor.

Beef pancreas is nutrient-dense, offering high-quality protein along with B vitamins and other nutrients that are harder to find in regular muscle meats. It’s got a creamy, tender texture when cooked properly, and a much milder flavor than liver or kidney, making it more approachable if you’re exploring organ meats for the first time.
