Description

Our Longbottom Farm grassfed / grass-finished beef sweetbreads (thymus gland) are a delicacy you won’t find in your local supermarket.  They are high in protein, vitamins, and minerals, and have a rich, creamy texture. Sweetbreads can be prepared in a variety of ways, but they are typically pan-fried, roasted, or grilled. They should be cooked until they are firm and white throughout.

Our beef sweetbreads come from our cattle raised on pasture, eating a diet of what the pasture provides.  No grain or supplemental feed.  This gives our sweetbreads a richer flavor and a higher nutritional content than sweetbreads from conventionally raised animals.  A couple tips for preparing:

  • Soak the sweetbreads in milk for at least 30 minutes before cooking. This will help to remove any impurities and make them more tender.
  • Remove any fatty tissue or gristle from the sweetbreads before cooking.
  • Be careful not to overcook the sweetbreads, as they can become tough.
