Easy Honey Garlic Pork Chops

Looking for some delicious pastured pork chop recipes?  How about a sale because Spring is approaching (I’d argue already here)? Well fire up the grill or get the skillet ready because we’re covering both this week!  

First things first, let’s talk about why pastured pork is the bee’s knees. Unlike factory-farmed pork, our pigs get to live their best lives outside in the fresh air, basking in the sunshine, and feasting on grass, roots, and other goodies. This translates into pork that’s leaner, tastier, and more nutritious. Plus, it’s better for the environment and animal welfare, and you get to support a small family farm like ours. That’s what we call a win-win-win-win situation!

Now, we know that some folks might be intimidated by cooking pork chops. Fear not, for we have scoured the interwebs looking for highly-rated recipes that are easy and scrumptious. These recipes must also pass our main litmus test, which is ‘Will our kids eat it?’.  This one is a definite yes and one of our favorites:

Easy Honey Garlic Pork Chops

Quick, delicious, and requires almost no prep time.  Can be made with Bone-In or Boneless Pork Chops.  Passed the kid test!  Here’s how it’s made
:

Ingredients:

  • 4 pork chops, bone-in or boneless
  • 1/4 cup honey
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Chopped fresh parsley, for garnish (optional)

Instructions:

  1. Preheat the oven to 375°F.
  2. In a small bowl, whisk together honey, garlic, soy sauce, and olive oil.
  3. Season pork chops with salt and pepper.
  4. Heat a large skillet over medium-high heat and add the pork chops. Cook for 3-4 minutes on each side, until browned.
  5. Brush the honey garlic glaze over the pork chops and transfer them to a baking dish.
  6. Bake for 10-15 minutes, or until the internal temperature reaches 145°F.
  7. Optional: Garnish with chopped parsley before serving.

How Rising Costs are Affecting Our Farm

And What We’re Doing About It

Inflation has been a hot topic of discussion for a while now, and it has had an impact on both the financial markets and consumer prices. According to the Bureau of Labor Statistics (BLS), beef prices have risen almost 20% between 2021 and now.  Egg prices are up almost 50% this past year.  We have also seen price increases for pork and poultry. Unfortunately, our farm has also felt the impact of rising costs.

We want to be transparent with our customers about how inflation is affecting our business. Our non-GMO feed represents one of our biggest input costs for raising pigs and chickens, and we have absorbed price spikes as high as 25% above the expected cost.  Additionally, materials like boxes / Egg Cartons have increased by over 35% and we have experienced multiple price spikes on processing / butchering, Gas for deliveries and on farm machinery and labor.  Every aspect of our business has been affected, and while we try to hold prices consistent, it’s just not possible with the historic rise of our input costs. 

Despite these challenges, we remain committed to providing our customers with high-quality, pasture-raised products. While our products may be more expensive in the short term, we believe that they are worth the investment for the long-term health of our bodies, land, animals, and community.

To minimize the impact of rising costs on our customers, we have implemented 3 steps.

#1.  30 Day Price Freeze.

First, we are freezing all pricing for the next 30 days to help our customers stock up on everyday staples.

#2.  5-15% Price Ceiling. 

Second, we will limit any price increases to 5-15% on any single item after the 30-day price freeze.

#3.  Cutting Costs

Third, we’re working on efficiency items to keep cost’s down that include buying feed in bulk, investing more to growing out herds (which in turn produce more animals cheaper), and continuing to grow our bundle / share selections that save you money.

We know that most companies wouldn’t bother communicating 5-15% price increases to their customers, but we believe in having an open conversation with our customers to keep them informed. Thank you for your understanding and continued support of our farm, mission, and better food. One of our big focuses this year is to have people out to the farm for events, tours, and to meet you guys in person.  When we moved here, there was nothing but 2 polebarns, the house, and fields.  In otherwords, really no infrastructure.

Our barn is nearing completetion and with that, a place to organize events, tours, and more.  We’ve thought about using our house, but to be honest, it’s serving as our farm office, cold storage, merchandise / box storage, and more.  In short, it’s a mess and noone wants people to visit their messy house.

So, we’ve been kicking the idea around for a while to share what we do on Youtube.  Knowing where your food comes from and how it’s raised is one of our core missions at Longbottom Farm.  We’ve historically tried to convey that with having you come to our farm for pick-ups, farm tours, and monthly newletters with photos and explanations. 

Video provides a whole new outlet to not only share what we’re doing visually, but talk about it as well.  In full transparency, it also allows us to get more eyes on the farm, which we want from a growing farm standpoint, but also to show why supporting small local farms is important (Healthy, better quality, lower carbon footprint, and humanly raised animals).
